Zucchini Cake
3 eggs, beaten
2 cups flour
1½ cups sugar
2 teaspoons cinnamon
1 cup oil
2 teaspoons baking soda
2 cups grated zucchini
1 teaspoon baking powder
Shift together all dry ingredients, then add eggs, oil, and zucchini. Pour into floured bundt cake pan and bake 1 hour at 350 degrees. Cool and shift powdered sugar over top.
5 honks, though I prefer it veganized these days. :)
